Our company was founded by the owner of a fresh fish wholesaler, Miyoshi Suisan Co.,
Ltd. that has been in business for more than 90 years. We have the advantage of being able to purchase the freshest seafood caught and prepared on the same day. Our products are the result of the knowledge and skills we have cultivated over the years.

- We have been manufacturing our products without additives, with “safe, secure and tasty” as our company mission. This time, we have been focusing on the novel coronavirus. The virus is a virus that is attracting attention due to the infectious crisis of the novel coronavirus.
We believe that this has been lost due to changes in food culture in recent years. We do not necessarily believe that food additives are bad.
But.., We are committed to delivering safe, secure and delicious food without additives.
- For example, we cook “crab shells” and “sea bream heads and bones” over a whole day after roasting them to extract the flavor extract and create a
natural additive. Then, when we cook the croquettes, we add the extract and half a day’s stew of fried onions from Awaji Island to the croquettes.
The extract is kneaded into the croquettes at a ratio of about half an onion per croquette to give them a sweet flavor. We also use the béchamel in our
cream croquettes. The béchamel sauce used for the cream croquettes is hand-blown using a copper pan to produce a smooth, buttery béchamel with no lumps.
- The Setouchi TONOKOYA fried food series is available in oiled and un-oiled versions, with the oiled products being fried in rice oil.
(1) The crunchy, crispy texture of deep-fried products is due to the rice oil!
(2) Compared with other oils, rice oil does not oxidize easily over time and does not produce the unpleasant smell of fried food.

Fried horse mackerel (cooked in oil)
We purchase only the quantity that can be processed on the same day as the fish is landed. The fish is pre-treated to remove the inside bones, bones and bristles, cooked to make it easy to eat and to remove the water that gives it its odor. The meat is thick, juicy and crispy! The texture is fluffy, and you can feel the full flavor of the horse mackerel. The fish is dipped in a batter of our own formula to make a batter liquid, and then hand-dipped one by one in completely additive-free breadcrumbs and frozen in a quick-freezer at -40°C (-40°F). The fish is then frozen in a -40°C quick-freezer to ensure safety. Before shipping, the fish is put through a metal detector to ensure that it is safe and secure.
Croquette with creamed shrimp (cooked in oil)
We added our homemade béchamel, cooked in 100% Hokkaido butter, with Indian farmed whiteleg shrimp cut into small pieces and flambéed in white wine, three kinds of mushrooms (shimeji mushrooms, mushrooms and shiitake mushrooms) fried in butter, onions from Awaji, which were fried for half a day, the juice from the fried shrimp , and the juice from the savory shells of the shrimp . The natural flavor of the shrimp shells is added by boiling them after they have been roasted. The addition of the boiled juice has eliminated the problems inherent in additive-free products. The taste of the additive-free product is light and bland.
These cream croquettes are our signature croquettes, which we have created with our knowledge and experience.
We divide the croquettes into 80g portions, dip them in our handmade butter solution to make a thin batter, coat them by hand with additive-free coarse breadcrumbs and quickly freeze them at -40°C to ensure their safety.

Fried shrimp cutlet
We like our shrimps to be plump! We cut the larger shrimps into large pieces so that you can feel the texture when you eat them. The shrimps are full of flavor! The shrimp cutlet is filled with the flavor of the shrimps.
Lemon salted malted rice from Shinjo Miso is added for flavoring.
The refreshing aroma of the lemon and the mildness of the koji make this a refreshing dish.
The 80g portion is dipped in our handmade butter solution to make a batter liquid, coarsely coated with breadcrumbs by hand, and then flash frozen at -40°C to keep it safe.
